Watermelon and feta cheese star together in this refreshing summer salad.
10 ounce package mixed baby greens
Half of a red onion, cut in thin slices
4 cups of watermelon cubes
1/2 cup of crumbled feta cheese
1/2 cup of chopped, fresh cilantro
20 nicoise olives
2 tablespoons of champagne vinegar
6 tablespoons of olive oil
salt and pepper
Be sure to rinse off all of your salad ingredients.
Whisk the vinegar, oil, salt and pepper together to make the salad dressing. You'll want to add the oil last and use a whisk to combine as your pour it in. Set aside.
Then, toss with the salad ingredients in a large bowl. Pour half of your dressing over the salad evenly and toss again. Add remaining dressing and toss once more, then serve.
How To Serve
Serve at room temperature. Be sure to add the dressing right before serving.
