Ingredients
3 cups watermelon, diced medium
1/2 cup red onion, diced small
1/2 cup red bell pepper, diced medium
1/2 cup tomato, diced medium
1 tablespoon minced jalapeno pepper (seeds removed)
3 tablespoons fresh cilantro, chopped
2 garlic cloves, minced
1 1/2 tablespoons balsamic vinegar
1/4 cup olive oil
salt and pepper to taste
Directions
Combine all your ingredients into a bowl and refrigerate for about 2 hours before serving.
