Watermelon and feta?! Before you make that face, give this surprisingly tasty salad the chance it deserves.
Not only is watermelon easy to get your hands on in the summer (we can't think of a summer party we've been to without it!), it's also really versatile.
Apart from watermelon margaritas, martinis and slices, though, have you ever gotten creative with it as an ingredient?
This salad is really light and satisfying, which is why we like to make it for lunch during the summer - it leaves us guilt-free and pool ready, but still tastes great!
Ingredients
4 ounces of feta (cut into small cubes)
1 half of a seedless Watermelon (cut into small cubes)
1 half of a red onion (sliced thin)
2 tablespoons of balsamic vinegar
fresh basil leaves for garnish
Directions
Mix all of your ingredients in a salad bowl adding the balsamic vinegar right before you serve it.
