Below, I share my mom's recipe for, what I believe, is the best meatloaf in the world! Serve it the traditional way for dinner, or if you'd like to offer party guests an appetizer they're not expecting, transform your meatloaf into bite-sized pieces.
Keep it elegant by cutting small circles out with a cookie cutter to create an hors d'oeuvre base. Then, pipe a dollop of mash potatoes out on top with a pastry bag and sprinkle with crispy fried onions! Yum!
Ingredients
For Meatloaf
1 pound chop meat
2 eggs
1 cup oats
1 tablespoon horseradish
2 teaspoons salt
1/4 teaspoon pepper
1/2 cup ketchup
1/4 cup milk
1 package onion soup mix
For Glaze
1 tablespoon horseradish
1/2 cup ketchup
1 tablespoon brown sugar
2 teaspoon spicy mustard
Directions
Combine all ingredients for meatloaf well. Mix ingredients for glaze in a separate bowl.
Form a loaf from mixture and place in pyrex dish.
Once you form your loaf, coat the entire top and sides with all of the glaze.
Cook at 350 degrees for 1 hour and 15 minutes.
