As a bona-fide lover of all things Harry Potter, I set out to create a cupcake to not only show that love but taste amazing as well! The cupcakes themselves are a butter cream soda cake, filled with butterscotch ganache, topped with butterscotch buttercream and drizzled with more awesome butterscotch ganache. They are all finished with custom Harry Potter fondant toppers.

I am the owner of PJ's Baby Cakes in Lincoln, Nebraska. We are Lincoln's first cupcake bakery (exclusively cupcakes). I started this business 3 years ago after being laid off from my job at an insurance company. I love cupcakes and creating new flavors and decorations so I figured this would be a great opportunity to do so and make some money. I named my business after my son, Patrick. I started out of the kitchen of my home doing farmer's markets and small orders. After just a few months, I grew out of my home kitchen and moved into my store front. Now, 3 years old and I'm having an amazing time! When I'm not baking, I enjoy spending time with my family, reading and chilling out in front of the TV watching my favorite shows. I also enjoy traveling, although, I haven't been able to do as much of that since starting the business. Hopefully this will change soon!
