An espresso drink coming together in a cupcake. I love to indulge from time to time in a warm, espresso beverage. Something about the espresso foam and soy milk froth as it swirls around in my cup. I sip and savor all morning long. Then I get to the bottom of the cup and instead of approaching it as my cup is empty, I am full of joy instead. The best parts come when the cup runneth dry. The sweet chocolate syrup at the bottom with white foam. That's the best part. So I wanted to create a cupcake that resembled my love for this drink. It's moist and rich and at the bottom of the cupcake is a chocolate espresso cream surprise. An Oreo cookie was lined in the muffin tin to recreate the best part of the drink. Yet, the frosting top does not disappont either as the first layer captures the espresso froth while the next layer captures the milk foam. The hints of espresso and dark, rich chocolate will tempt your soul...wanting more!
I am a mother of three young boys ranging in ages from 3-9. I own a business, work full-time and my boys keep me moving non-stop. I drink a lot of coffee to keep up with them. I also enjoy reading, writing, running races, fitness, adventure, health and wellness. I blog about my adventures raising three sons and juggling home, career and life. It is not always rainbows and daisies but we sure have fun! Life is short...drink coffee, be well and enjoy the ride!
