For my wedding in July of 2012, I took on the task of making my own cupcakes. After 15 plus trials, I found 2 of the most perfect recipes. I made 200 cupcakes for my wedding day. Half of them were chocolate raspberry, and the other half were pina colada. These pina colada wedding cupcakes were made with a coconut cake and topped with pineapple cream cheese frosting. Last but not least, my favorite part...the edible lime green glitter to match my wedding colors. Despite the long hours, it was all worth it in the end! Yum!!
I am a newly married pre-kindergarten teacher living in Denver, Colorado. My husband and I recently moved here from Wisconsin. Although we are enjoying the time in our new home, we hope to get back to Wisconsin with our families some day. I enjoy cooking, trying new restaurants and being outside in the sun.
