"Spring Has Sprung" Coconut Cream Cupcakes. These are a white cupcake filled with a coconut cream pudding and frosted with a light cream cheese whipped cream frosting. They are topped with pretty gum paste flowers, toasted coconut, colored sprinkles and sugar pearls. I was inspired to make these on a beautiful warm spring day when I knew spring had finally sprung!
