Depending on the number of guests and your budget, you may choose to host a potluck style party or cook the entire meal yourself. Banana Wrapped Salmon with Coconut Rice


For Coconut Rice
(serves 4)
  • 2 cups Jasmine Rice
  • 1 1/2 cups Coconut Rice
  • 1 1/2 cups Water
  • 1 stalk of Lemongrass
  • 1/2 tsp Salt and Pepper
For Sauce
  • 1 Tablespoon (Tbs) Red Jalapeno, minced
  • 1 Tbs. Ginger, Fresh and Minced
  • 1 Tbs. Cilantro, Leaves Only, Minced
  • 4 Tbs. Soy Sauce
  • 2 Tbs. Mirin (Sweet Sake)
  • 2 Tbs. Lime Juice
  • 2 Tbs. Rice Wine Vinegar
For Salmon
  • 6 oz. Salmon, Pin Bone Out and Skin Off, Seasoned with Salt and Pepper
  • Banana Leaf
  • Coconut Rice
  • Asparagus, Cut on Bias
  • Leeks, White Part Only, Julienned
  • Carrots, Peeled and Julienned
  • Lemongrass, Finely Sliced, Outer Leaves discarded
  • Red Jalapeno, Sliced Thin
  • Cilantro Leaves
  • Cumin and Coriander, Ground

Baby Green Salad with Shaved Pecorino Cheese and Balsamic Vinegar
You can purchase baby greens at your supermarket or better yet, if you have access to a local farmers market, select from the many varieties of baby lettuces and greens for your salad. I wash my greens under cold running water and then dry them in a salad spinner.

The "OXO" salad spinner is a dream. It turns "making a salad" a snap! You can rinse and spin your greens the morning of the party and store them in the fridge until you are ready to dress and serve the salad.


 

Chipotle Deviled Eggs with Tasso Ham and Cheddar
